The last time I remember eating Banana cake was when my friend baked it at 3am hungover and it just tasted sooo gooood. As I had 2 bananas lying around I wasn't exactly going to let them go to waste and rather then making my usual grilled banana and peanut butter sandwich which is lushhh, I decided on banana cake adding my own twist peanut butter frosting as I just can't get enough of peanut butter.
Banana Cake Ingredients:
Serves roughly 10
125g butter
150g caster sugar
1tsp vanilla extract
1 egg beaten
2 ripe bananas mashed
190g self raising flour
60ml milk
Peanut Butter Frosting Ingredients:
1 cup of peanut butter smooth or crunchy
2tbsp butter
3tbsp milk
1tsp vanilla extract
2tbsp cream cheese
2tbsp milk
Preparation Method
Prep: 10mins Cook: 35mins
1. Grease and line a 2lb loaf tin (I used a baking tray). Melt butter, sugar and vanilla in a saucepan over a medium heat.
2. Remove from heat and add the mashed bananas, mix well.
3 . Add egg, mix well.
4. Stir in the flour and milk.
5. Pour into the prepared tin and sprinkle with a tsp of demerara sugar to give a crunch topping (optional)
6. Bake at 150 degrees fan oven for 35 minutes until skewer comes out clean.
7. Take out of oven and allow to cool on wire rack whilst making frosting.
8. To make frosting combine all the ingredients into a bowl and whisk until light and fluffy.
9. Frost cake and cut into pieces (although I found it easier to cut first and frost individually)
